I tried this cake at last Saturday's tasting and it was delicious! Great 1st video blog. I've just decided to not to bother using the mixer next time I make whipped cream.

Sure- Just whip all-natural heavy cream, add some sugar to taste as the cream thickens, and add Cognac (Grande Champagne or Fine Champagne)to taste toward the end. No need to follow a recipe. Just use your taste buds.

You can put the Cognac whipped cream on the cheesecake, freeze it, and thaw it; or you can make it, refrigerate it, and add it at the last moment.

I will miss buying your cakes in the stores and going to tastings! Your desserts are the best by far! So different, so purely delightful and European. Trader Joe's didn't know how lucky they were to carry a product like yours. I stopped shopping there last year after many disappointing purchases. Best of luck to you in the future.
